That is a very individual and personal question that must be addressed by everyone who takes up the sword of self-defense regardless of whether it is through martial arts, boxing or some other form. It requires one know about force, the law and the moral belief system of the society they live in to determine when it is best to stop in self-defense.
This assumes that the person has done everything reasonable and within their capabilities to avoid/deescalate the conflict. This is only when you resort to the last resort of self-defense, the physical. The study of the full spectrum that is self-defense in conflicts is daunting but necessary to make this individual decision as to when to stop in self-defense.
